Remember when I said I would do this Trader Joe's & Essential Oil recipe thing every month? Well, it's been a few and I have good reasons. 1) we bought a house and 2) well, baby. Moms, you feel me? In an effort to make it up to you I am bringing you this mouth-watering eggs benny recipe using rosemary and thyme vitality essential oils. I will keep my vow to you that you only need to stop at one place for all of this: Trader Joe's. But if you need the EO's holler at your girl. Disclaimer: I only recommend ingesting Young Living Vitality Essential Oils. Put it in your cart: Trader Joe's Thyme Honey Balsamic Vinaigrette Paprika Kumato Tomatoes Hollandaise Sauce Arugula Eggs English Muffins Coconut Oil (Salt and Pepper to taste) (Rosemary and Thyme Vitality Essential Oils) ![]() I like non traditional eggs benedicts in that I like to have my eggs scrambled. Feel free to poach, fry, whatever you'd like! If you aren't cooking your eggs with a tablespoon of coconut oil you are missing out on the fluffiest eggs of your life. Plus, coconut oil is just so good for you! Cook your eggs, set them aside. To make the "salad": Chop your tomatoes. In a mixing bowl, blend your arugula, vinaigrette (amount is to your liking and depending on how much you are making), chopped tomatoes, EO's, and salt and pepper to taste. My recommendation is one drop of thyme and for the rosemary, use a toothpick to add the oil. Tip: basil vitality essential oil would also be yummy! ![]() Follow the directions on the hollandaise sauce (SO easy!) and while it is heating up, toast your muffins. You're ready to assemble! I like to assemble in this order: Bread,Eggs,Salad Mix,Hollandaise, Paprika. ![]() ENJOY!
