Healthy Creamed Spinach

The thing I crave the most is anything creamy. You know, that cheesy, hot, home cooked dish that reminds you of Thanksgiving. Since learning those things are hard on my gut I’ve had to get a bit creative. I found a recipe for creamed spinach and tweaked it to be paleo friendly! It’s soooo good! I added a secret ingredient that makes it UNREAL! If you’re not into the paleo thing, I get it! I added ingredients you can easily sub! Enjoy!

​​I N G R E D I E N T S
  • 2 tablespoon Coconut Oil or ghee
  • 1 medium Onion chopped finely
  • 2 cloves Garlic pressed or finely chopped
  • Fresh Ground black pepper
  • Sea Salt (I use Himalayan pink salt)
  • 1 Bag of Organic Spinach or baby kale
  • 1/3 cup coconut milk (canned) or heavy cream
  • 1 teaspoon grated, fresh nutmeg (SECRET!)
Note: You can also use raw heavy cream and/or add parmesan cheese if desired!

H O W T O M A K E
  • In a large skillet, over medium then sauté onions and garlic until soft in your healthy fat.
  • Add Spinach and toss, feel free to add a little more oil if needed
  • Season with salt, pepper and a pinch of crushed red pepper to taste.
  • Reduce heat to med/low and add the coconut milk, stir well.
  • Allow to heat/simmer slightly to reduce for about 1-2 minutes
